Graved salmon, which means "buried salmon", used to be buried for a few days in order to preserve it, according to an old Scandinavian tradition. We save ourselves that because freshly prepared graved salmon is simply so delicious that we serve it straight away. So almost straight away, because the salmon has to stay covered in the fridge for at least 24 hours. But the wait is worth it because the results are guaranteed to make your mouth water.
