Chimichurri seasoning

Even steak purists get weak. We also liked chimichurri, the spicy herb sauce from Argentina. Since it can be made from both fresh and dried ingredients, you can decide whether you would like to refine our spice mixture. A good vegetable oil and a few pinches of salt are important. For even more freshness, add freshly squeezed lime juice. The sauce tastes best if it has been allowed to sit in the fridge for a few hours. In some parts of Argentina it only comes to the table after two weeks. Perfect for beef, fabulous on a dry-aged rump steak.

What is chimichurri anyway?

The name, which is difficult to pronounce, sounds quite funny at first. And you can't really imagine much about it without further information. So we'll help you out and tell you everything you need to know about chimichurri.

Unfortunately, the exact origin of the name is not known, but what we can definitely tell you is that it is a spicy sauce with a bright green color. Chimichurri sauce originally comes from Argentina, but is also very popular in many other countries in South America. It is prepared from various spices and herbs, which is also what gives it its characteristic color. In Argentina, Uruguay and Co. it is hard to imagine life without it and is mentioned in many traditional recipes. This dip also forms the basis for the classic Churrasco steak sauce, among other things. You can buy these ready-made almost everywhere or you can make them fresh yourself using the appropriate ingredients.


The recipe behind the dip

As is so often the case, there is no fixed recipe to stick to for chimichurri sauce - similar to the spice mixture, for example Garam Masala. Everyone prepares it the way they like it. There are mild but also quite spicy recipes with appropriate spices to enjoy the sauce with the desired intensity. As a rule, ingredients such as parsley, dried thyme, limes, onions, oil, laurel and pepper or chili flakes their way into court. If you like it chunky and fruity, you can also use small diced tomatoes and peppers. In addition to their taste, they also add something to the eye thanks to the red, eye-catching color.

But the chimichurri spice mixture doesn't just cut a fine figure as a dip: it serves at least as well as a delicious marinade for meat! In general, it is advisable to let the mixture sit in the refrigerator for a day before using. This allows the aromas to combine with each other and the taste to develop intensively. Even if the sauce is used to marinate grilled meat, it should ideally be allowed to soak in for a few hours before the steak or fillet ends up on the grill.

Because the chimichurri sauce goes so well with meat, it is a must at any barbecue in Argentina, which is also called “Asada”! In addition to beef and pork, it can also be combined with poultry or fish and is therefore suitable for almost every grill recipe. Because of the many herbs used in chimichurri, it's not surprising that it has a spicy, herbal flavor. The vinegar and oil can usually be tasted well in the sauce. If desired, a more acidic vinegar gives the whole thing additional acidity as a cutting counterpart to the spiciness.
